Tapioca pudding, good idea

Today I tried something new. I used the tapioca pearls a friend gave me (I love receiving food-gifts!), and I had never tried tapioca before. I made this pudding that turned out to be really good!

For 4 small cups -as in the picture – I used:

60 gr of tapioca pearls
300 ml of soy milk
10 tsp of agave syrup (or more, to taste)
6 tsp of cocoa powder
A vanilla stick

Let the pearls soak in warm water for about an hour, then rinse them.
Heat the milk until it boils, then turn it off and add the vanilla stick. Leave it there for 5 minutes, then take it out.
Add the tapioca and cook until the pearls become transparent. Then, finally, add the cocoa powder and the agave syrup, and mix.

Pour the pudding in the cups and let it cool down. Put it in the frigde and leave it there from 8 to 12 hours: I had one after 3 hours of refrigeration, but the one I had the day after was so much better!
